Japan's First Malt Whisky Distillery
Shinjiro Torii established Suntory as a wine merchant in 1899, but his ambition extended to creating a distinctly Japanese whisky. In 1923, he founded Yamazaki, Japan's first malt whisky distillery, in a humid valley southwest of Kyoto where the Katsura, Uji and Kizu rivers converge. The location was chosen for its pure mountain water and climatic conditions favourable to maturation.
Masataka Taketsuru, who had studied distilling in Scotland, served as the distillery's first master distiller. The partnership laid the foundation for Japanese whisky, though the two men would later pursue separate visions. Torii remained committed to developing a whisky suited to the Japanese palate—softer, more delicate and shaped by the country's distinct climate and sensibilities.
By 1929, Suntory released its first whisky. Fifty years later, Yamazaki's single malts began gaining recognition beyond Japan, establishing the distillery as a benchmark for quality and precision.
Two Distilleries, Distinct Characters
Yamazaki and Hakushu represent contrasting expressions of Japanese whisky. Yamazaki, positioned in a warm, humid basin, produces malt whisky with richness, depth and a pronounced influence from wood maturation. The distillery employs a variety of still shapes and sizes, fermentation lengths and distillation cuts, allowing blenders to work with an exceptionally diverse palette of spirit styles from a single location.
Hakushu was established in 1973 amid the forests of the Southern Japanese Alps at an elevation of approximately 700 metres. Its mountain water, drawn from the granite bedrock of Mount Kaikoma, and cooler, drier maturation environment yield whiskies with a fresher, more delicate character marked by green fruit, herbal notes and crisp minerality.
The Chita grain distillery, established in 1972 on the Chita Peninsula, completes Suntory's production triangle. Its continuous column stills produce grain whisky of exceptional purity and refinement, essential to the house's acclaimed blended whiskies.
Mizunara and the Art of Maturation
Suntory's use of Japanese Mizunara oak distinguishes its whiskies and represents one of the most significant contributions to global whisky maturation. Mizunara, a rare and difficult wood to work with due to its porous grain and tendency to leak, imparts distinctive notes of sandalwood, incense and oriental spice when properly seasoned and coopered.
The humid Japanese climate accelerates interaction between spirit and wood, and Suntory has developed exceptional expertise in managing maturation across varied cask types. American white oak provides vanilla and sweetness, European oak contributes dried fruit and tannin, and Mizunara adds complexity and an unmistakably Japanese signature.
This layered approach to wood management allows blenders to craft whiskies of remarkable depth and balance. At the summit of the portfolio stands Hibiki, a blended whisky that harmonises malt from Yamazaki and Hakushu with grain from Chita. Hibiki has received consistent international acclaim, including multiple awards recognising it among the finest whiskies produced anywhere in the world.
Precision, Harmony and the Philosophy of Tsukuriwake
Central to Suntory's identity is the concept of *tsukuriwake*—the practice of producing multiple styles of spirit within a single distillery. Yamazaki alone operates stills of different shapes, uses varied fermentation times and selects from numerous distillation cuts, yielding dozens of distinct new-make spirits before maturation even begins.
This diversity provides blenders with an unparalleled range of components, enabling them to create whiskies of seamless integration and layered complexity. The resulting style balances precision with softness, structure with elegance, and boldness with restraint—a reflection of Japanese aesthetics applied to whisky craftsmanship.
Limited releases, vintage expressions and age-statement single malts from both Yamazaki and Hakushu have become highly sought-after among collectors.
