A Distillery Built Among Japan's Deepest Forests
Suntory established Hakushu as its second malt whisky distillery, more than half a century after founding Yamazaki. The chosen site in Yamanashi Prefecture sits within one of Japan's most heavily forested regions, where dense woodland covers the mountain slopes and pure spring water flows from the granite bedrock of the Southern Alps.
The distillery's remote, elevated location was selected deliberately to provide access to exceptional water and to create whisky with a character distinct from the richer, more rounded style of Yamazaki. Hakushu's forest environment and cooler mountain climate would shape a different expression of Japanese single malt.
Precision Through Diversity
Hakushu operates a remarkable array of copper pot stills in varying shapes and sizes, allowing the distillery to produce an unusually wide spectrum of spirit styles from a single location. Stills include both direct-fired and steam-heated models, each contributing different qualities of character and texture during distillation.
Some stills are fitted with straight necks to create a richer, heavier spirit, while others feature bulbous shapes that encourage greater reflux and deliver lighter, more delicate distillates. This diversity provides Hakushu's blenders with an extensive palette of spirit profiles, from clean and floral to rich and fruity, all produced on site.
Lightly peated malt is used selectively, contributing a subtle smokiness that weaves through Hakushu's signature freshness rather than dominating it. The distillery's use of peated barley is more restrained than many Scottish distilleries, creating a gentle background note that complements rather than defines the whisky.
## Maturation in Three Oak Traditions
Hakushu matures its spirit in a combination of American oak, Spanish oak and Japanese Mizunara oak casks. American oak contributes vanilla, coconut and soft fruit character. Spanish oak, often from ex-sherry casks, adds dried fruit, spice and a deeper richness.
Mizunara oak, native to Japan and exceptionally rare in whisky maturation, imparts distinctive sandalwood, incense and oriental spice notes alongside a pronounced fragrant quality. The wood is difficult to work and prone to leaking, requiring considerable skill and patience. Its influence is subtle but highly prized, adding a uniquely Japanese dimension to the distillery's most refined expressions.
The forest setting and mountain elevation contribute to Hakushu's maturation environment. Cooler temperatures and natural humidity encourage slower, more gradual development, helping preserve the whisky's characteristic freshness and aromatic clarity even after extended ageing.
A Forest-Fresh Signature
Hakushu 12 Year Old represents the distillery's defining style, balancing green apple, citrus zest and mint with soft peat smoke and a crisp, mineral finish. It is a whisky shaped by its forested surroundings, offering elegance and precision rather than weight or power.
Hakushu 18 Year Old and Hakushu 25 Year Old extend this character with greater complexity, layered oak influence and refined integration of smoke, fruit and wood. Limited editions and single cask releases have become highly sought after among collectors, reflecting the distillery's status as one of the most respected names in Japanese whisky.
