The Creation of Brut Champagne
When Louise Pommery inherited the House in 1858 following her husband's death, Champagne was predominantly sweet, tailored to 19th-century tastes. Recognising evolving preferences, particularly in the British market, she instructed her cellar master to develop a drier style that emphasised finesse and natural balance over residual sugar.
In 1874, Pommery introduced the first commercially successful Brut Champagne. The launch redefined expectations across the industry and established a template that would become the dominant style within decades. This bold decision positioned Pommery as a house driven by innovation, refinement and a vision for how Champagne should evolve.
A Chardonnay-Led Identity
Chardonnay forms the structural and aromatic foundation of the Pommery style, bringing luminosity, tension and mineral clarity to every cuvée. The House sources extensively from Premier Cru and Grand Cru vineyards across the Côte des Blancs and Montagne de Reims, with careful selection ensuring fruit that expresses both purity and depth.
Brut Royal, the signature non-vintage cuvée, typically contains around 40% Chardonnay and is crafted for immediate elegance and approachability. At the summit of the range, Cuvée Louise is a prestige vintage Champagne named in honour of Madame Pommery, composed predominantly of Chardonnay and produced only in exceptional years. Extended ageing on lees amplifies its complexity, developing layers of white fruit, brioche and fine mineral structure.
The Crayères Beneath Reims
Beneath the Maison lies an extraordinary network of ancient chalk cellars, originally quarried during the Gallo-Roman period. These crayères descend approximately 30 metres below ground and extend for around 18 kilometres, forming one of the most extensive and historically significant cellar systems in Champagne.
The chalk galleries provide constant temperature, darkness and natural humidity, creating ideal conditions for the slow transformation that occurs during lees ageing. This environment allows Pommery's Champagnes to develop their characteristic finesse, delicate mousse and refined texture over extended periods of maturation.
The cellars form part of the UNESCO World Heritage Site recognising the Champagne Hillsides, Houses and Cellars. Within their walls, traditional méthode champenoise practices continue to shape wines that connect directly to both the geology and the historic craftsmanship of the region.
