A House Built on Restraint
Edmond de Ayala established the house in 1860 during Champagne's period of rapid commercial expansion. While other houses pursued volume and broader markets, Ayala developed a reputation for measured production and refined style. The house remained family-controlled for over a century before joining the Bollinger portfolio, a partnership that has reinforced rather than altered its identity.
Today, Ayala operates with the same principles that defined its founding: extended lees ageing, lower dosage levels and minimal use of oak. These decisions allow the natural character of each cuvée to emerge with clarity and finesse.
The Low-Dosage Philosophy
Ayala's approach to dosage is central to its identity. By reducing added sugar to levels significantly below Champagne norms, the house allows the underlying wine to express itself without softening or masking. This philosophy requires exceptional base wines, as lower dosage reveals rather than conceals.
The result is a signature style defined by tension, minerality and vibrant citrus fruit. Brut Majeur, the house's non-vintage foundation, typically receives between four and six grams per litre of dosage—half the amount used by many comparable houses. This restraint creates Champagnes that feel precise, refreshing and distinctly site-driven.
Sourcing from Grand Cru and Premier Cru Sites
Ayala does not own extensive vineyards. Instead, the house sources grapes from carefully selected Premier Cru and Grand Cru sites across Aÿ, the Montagne de Reims and the Côte des Blancs. This approach allows access to diverse terroirs and exceptional fruit while maintaining the flexibility to blend with precision.
Aÿ itself, classified as Grand Cru for Pinot Noir, contributes structure and depth. Chardonnay from the Côte des Blancs brings freshness, minerality and aromatic lift.
