History and Heritage
The distillery's production philosophy centres on sherry cask maturation, particularly Pedro Ximénez and Oloroso hogsheads, which impart layers of dried fruit, dark chocolate and warm spice. Walker's hands-on approach includes personally selecting casks and overseeing every stage of maturation, ensuring consistency and depth across the portfolio. The distillery's copper pot stills and traditional methods allow the spirit to develop complexity while retaining the elegant, fruity character associated with Speyside malts.
